Jackass Corn is a thin crisp traditional Jamaican biscuit that is a popular sweet treat due to it's simple and easily accessible ingredients. The biscuit is baked tough and crispy. My grandma said , it is called Jackass corn because it is tough and stubborn like a jackass or donkey.However,According to the Dictionary of Jamaican English, it's called Jack Ass corn,because when you eat it, it sounds like the sound a donkey makes when it's eating corn.
